Buckeyes
1 1/2 cups peanut butter
1 lb. confectioner’s sugar
1/2 cup butter softened
1 teaspoon vanilla
6 oz. chocolate chips
2 tablespoons vegetable shortening
Mix peanut butter, sugar, butter, and vanilla together in a bowl. Line a cookie sheet with parchment paper. Roll the cookie mixture into bite-size round balls. Place on cookie sheet and refrigerate for 1 hour. Melt the chocolate chips with the shortening in a double boiler. Using a toothpick dip the balls into the melted chocolate leaving the top quarter of each ball undipped. Return to the cookie sheet to cool and allow chocolate to harden. Keep refrigerated until ready to serve. Makes about 5 dozen, depending on size.
