Avocado and Kale Salad
- 1 Avocado
- 2 Roma Tomatoes
- 1/2 English Cucumber
- 2 cups of Kale
- 1 small Red Onion
- Salt
- Pepper
- Garlic Salt
Chop tomatoes and cucumber into small chunks. Slice red onion into very thin slices. Cut the avocado into quarters then cut each quarter into at least 5 chunks so that you have at least 20 chunks of avocado.
Layer the salad in a large serving bowl: kale, tomatoes, cucumbers, avocado, onion, salt, pepper, garlic salt. Repeat. Try to make at least 3 layers to ensure a well balanced salad.
Kitchen Tip:
When preparing vegetables, make a single layer of each on a paper towel, cover with a paper towel and let set for 5 minutes. This helps remove excess juices so the salad will not become overly soggy.
Handy Spices:
In a spice shaker mix 2 parts salt, 1 part pepper, and one part garlic salt. (Example in a 1 cup shaker use 1/2 cup salt, 1/4 cup pepper, 1/4 cup garlic salt - mix well). Now you have a handy go to shaker of the most popular spices in your cupboard. Use to season meat, veggies, salads-anything you want!
